I use Shore Lunch. I like it on all kinds of fish, along with waterfowl and upland game.

finely crushed saltene crackers, dip the fish in a mix (1 egg mixed with 2 cups milk) cover them with the crackers and fry them in a skillet with a little vegetable oil. sprinkle pepper on them while cooking. cook till golden brown, flip over, sprinkle that side with pepper and cook again till golden brown on that side. once golden brown place inbetween paper towels to dry off the excess oil and eat. simple and delicious (i'm a simple kind of guy). don't know how well that works with trout since i've never caught one. i'm more the bluegill, bass, crappie, perch eater. don't have any trout close to me unless bought at a store.

O.K. here is my secret recipe ! Shorelunch and pancake batter 2/3 shorelunch--1/3 pancake batter. mix with milk to make a sticky consistency, dip fish in egg of course. drop fish into bag with mixture and shake well. drop into hot grease, grab a fork !  Walleye love to be dressed in this mixture !

we use 1 cup cornmeal and 1 cup pancake mix. season to taste (salt, pepper, garlic powder and some lemon pepper ) mix well. pat the fillets dry.

then we dip the fillets in beaten egg, no milk, and liberally coat the fish well and fry til brown in hot oil.. we like to use lots of oil (canola seems to work best at high heat) in the cast iron skillet.. so it's kind of comes deep fried. walleye, perch,pike. and fillets from large trout... come out deee--licious...and nice and crunchy too...

Battered sumthin that smelled fishy and got a restraining order.....
Jeez, how complicated can fish batter be? Meal, Tonys in a paper sack . shake, throw in deep fryer, take out when they float!
