When dressing rabbits, cut through the sternum to the neck, and then down from the sternum to the anal opening. Keep the sharp part of the knife away from the internal organs to avoid punctures. Be sure no one is behind you for this next step: Grab the rabbit tightly by its two front feet and snap it backward briskly. Most of the internal organs will fly out behind you.
