When dressing rabbits, cut through the sternum to the neck, and then down from the sternum to the anal opening. Keep the sharp part of the knife away from the internal organs to avoid punctures. Be sure no one is behind you for this next step: Grab the rabbit tightly by its two front feet and snap it backward briskly. Most of the internal organs will fly out behind you.

you dont have to use a knife just grip rabbit behind front legs around chest and squeeze until you feel a pop then grip rabbit around kneck and pop it like a whip my 87 year old grandfather showed me

This works for me: Hold back legs pull hair down to get the coat off, then with a deer gut hock open from back to front guts come off, reach in to get the lungs and heart out.

We usally use a knife to split the fur in the middle of the back and pull from each end making sure the fur is apast the middle of the back legs and past the middle of the front legs and around the neck. Then using standard side cuts, cut through the bones, then we also use the gut hook knife start at rear and pullin forward till you pass mid ways of chest, then the guts fall right out! You may have very little left always remember to check.
