2 cups chopped, cooked rabbit or ptarmigan
1 cup crushed pineapple, drained
1 cup mayonnaise
16 slices bread
4 eggs, beaten
3 cups vegetable oil
Cranberry or currant jelly
Mix rabbit with pineapple and mayonnaise. Spread on 8 slices of bread, top with remaining slices and trim off crusts. Cut each sandwich into 3 parts and dip in beaten egg. Fry in oil heated to 350°F until brown. Drain on brown paper and dust with powdered sugar. Serve with jelly on the side.
