2 cups ground boar, cooked
1 cup yellow cornmeal
1/2 cup flour
2 tsp. baking soda
1 tsp. salt
1/3 cup sugar
3/4 cup milk
2 eggs
1/4 cup butter, softened
1/2 cup shredded carrot
1 medium onion, diced
1 cup shredded cheddar cheese
In medium bowl, mix cornmeal, flour, baking soda, salt and sugar. In separate bowl, mix milk, eggs and butter. Combine wet and dry ingredient mixtures. Add ground boar, shredded carrot and onion. Mix well. Pour mixture into hot, ungreased, 10-inch oven-safe skillet. Sprinkle cheese over ingredients in skillet. Bake at 425ºF for 20 minutes.
