2 lbs. Italian-style game sausage, uncased
1/2 cup Italian-seasoned bread crumbs
2 eggs, beaten
1 to 2 T. milk
1/2 tsp. minced garlic
1/2 tsp. black pepper
1/4 tsp. hot red pepper flakes, optional
2 acorn squash, split into halves, seeds and pulpy core removed
1/4 cup olive oil
Salt and pepper

In mixing bowl, combine sausage, bread crumbs, eggs, milk, garlic, black pepper, and red pepper. Mix well with your hands. Divide mixture into fourths, and form each into a ball. Place a sausage ball into each of the squash cavities; pat down gently. Coat each with a tablespoon of the olive oil, and salt and pepper to taste. Arrange squash, cut-side up, in a baking dish. Fill dish a third of the way up with water, and cover dish with foil. Bake at 325°F for 1 hour.
