Hunter’s Chili
From Celebrating Wild Game

3 lbs. ground big game
1/2 lb. bacon, chopped
3 medium onions, chopped
3 medium green peppers, chopped
1/2 cup chopped celery
4 cloves garlic, minced
2 cans stewed tomatoes
2 T. dried parsley flakes
2 T. chili powder
1 tsp. salt
1 T. black pepper
2 cans kidney beans, undrained
1 can pinto beans in molasses, undrained In Dutch oven, brown meat over medium heat, stirring occasionally. Remove from heat and set aside. Cook chopped bacon and add to browned meat, reserving bacon grease. Sauté onions, green peppers, celery and garlic in bacon grease until tender. Add tomatoes, parsley, chili powder, salt and pepper to Dutch oven. Heat to boiling, cover and reduce heat. Simmer for 1 hour to blend flavors. Stir in kidney and pinto beans and cook uncovered for 30 minutes. Serve with garlic toast. James Scheffelmaier

Jim...that sounds delicious. It reminds me of mine ..I use less onion and more chilies. Heck I sometimes throw in a can of V-8 juice if it gets too thick. Never added bacon before, but that sounds like a 'gotta do' thing from now on in. Thanks for sharing

You forgot to add the meat back to the pot. I am sure it is just an oversight while writing the recipe.

Doesen't mention how big a dutch, must be at least a 12 or maby bigger. Sound like a very good recipt, can't wait to try it.

First, there are no beans in chili. Second, the recipe is much to involved and takes to long to do after a long day hunting especially if you're in elk or deer camp in the winter.

There is two kinds of chili one with beans and one without ! that way one can have it eather way . we are going to make it and freeze some without beans of course so the beans wont get soggy that way we can have it anytime.

Need all the beans they can get in Aberta protein it's cooooold up there. Have to keep the fire going in the stove and a roof over the tool shed. LOL Will have to try this sounds supper good. I think the celery helps take the wild taste out along with the bacon. I'm getting hungery!!

Summer sausage I knew a guy who took summer sausage mix with cure raped it in tinfoil put it in the oven till it hit 152of put in freezer till it cooled. That way he didn't have to put it in cassings. Was not that bad can get mixings at any sporting good store.

This receipe sounds good with or without beans. Some people just don't know how good chili is with beans!! Beans,Beans good for the heart--the more you eat the more you f__t!!! The more you f__t the better you feel; lets have beans for every meal!!!

Sounds like a great recipe. Also u can always adjust according to ur own tastes. Remember most recipes are meant to be a guideline for getting started not a blueprint.
