hey everyone just had my first hog hunt and got one kill and was wondering how to cook the meat. Any ideas would be helpful. Thanks

Same way you would cook regular pig meat except you should cook it grey. I love to roast the "hams" or smoke them. When I roast them I cover in Lawry’s seasoning salt, fresh course ground pepper and garlic powder and cook at 350 oF until done. I grind the neck and front quarters and make sausage. If you make sausage make sure you add fat. The wild ones are way lean. My favorite part of the hog is to cut the tenderloin off in to big strips (I do not make chops myself) and then grill them with a thin coating of your favorite BBQ sauce. I like to take Bullseye and mix with some honey and garlic powder to taste. Once they are pink in the center i take them off the grill and slice into medallions and then return to the grill to finish.

Today the butcher will tell you you can cook pork med rare as trichanosis has been eliminated in commercially raised pigs. Being an old fart I wouldn't do it might be OK but Momma always said cook well done. Wild pigs MUST be cooked well done. The best course according to an old time butcher I know is to freeze all the meat for a week before cooking any.

Ive always liked to cook mine on a charcoal grill. All depending on how much I cook ill smoke it with hickory or scrub oak. One of the best ways that ive come across is to soak the meat in mojo(a spanish marinade) stay away from the badia brand. Let it soak for atleast 48 hours. It will also tenderize the meat. If its a boar let me know and ill give you a trick to make a boar with its nuts uncut taste like a sal.

Crock pot

Add a can of cream of mushroom soup, 1/2 cup of coffee cream(1/2 and 1/2), cook on low all day.

Very tender, Pour over large egg noodles,,,, Awsome.


Or do all and make a cassoreole.
