I love duck hunting as does my dog bandit...But my problem is I have found no recipe worth using my ducks are dry and tough.SO,could anyone give me a good recipe to use?Thanks for any advice........

See if you like this one: Depending on the size of the duck take two or more skinned and deboned duck breasts and lay flat on a cutting board cutting them from front to back to make two thin slices of meat. Then cut each in half so you have four pieces from each breast half. Whole breasts can be used but cutting them in half makes it easier to look for shot. I also use the legs if not shot up too bad.
Dredge the meat in flour and lightly brown in bacon grease or your preferred oil. Pour in CHEAP cream sherry (not cooking sherry) cover and simmer for an hour, longer doesn't seem to hurt, adding more cream sherry as necessary. When you are ready to eat add a can of cream of mushroom or cream of celery soup and stir into the remaining liquid. Add a bit of water only if necessary to make a gravy out of the mixture. Serve over rice.
I got this recipe from an old fellow over thirty years ago and have been using it ever since. I like it because it is simple and worthy of serving to company, not to mention the kitehen takes on a wonderful aroma while the duck is simmering. I have also used it with other dark meat such as woodcock, sharptailed grouse and geese with good results. |

Hey guys,
Fairly new here. Been poking around a bit and came across this. I am in the same boat (no pun intended) as you guys when it comes to the waterfowl.
I have a couple of awesome recipes to share if your interested.
The first is my favorite. Cut up your breasts into about 1 inch squares. Get your frying pan very hot and use a little olive oil to sear the meat. Just enough to keep the breasts from sticking to the pan. I usually use this with about 5-6 breasts. After seared, and don't overcook, add about a half a bottle of Franks Red Hot and a half a bottle of Soy Sauce. Cook till it becomes like a paste and enjoy. Very tasty and adds a little kick. Everytime I have done this for others they can't believe it's actually duck!
My next favorite is to use a very hot skillet again with olive oil and simply cook the breast whole but season with Cabela's Blackened Seasoning. Cook to about medium and enjoy. Very simple and very tasty.
My expereince has taught me to never overcook waterfowl. Can't wait to try out your recipe. Sounds great.

Ignore any advice you ever saw about cooking fowl to 185F when dealing with ducks, geese and turkey.....for that matter, grouse, dove, quail and Pheasant....I cansider wild fowl well done if beyond medium rare....quail and pheasant are okay to medium/medium well but not Waterfowl! Use this advice and try anyrecipe you like! I like duck breast wrapped around a cream cheese stuffed japepano held together by bacon....done when bacon is....maybe sooner! |

jlarcher, I will have to try that. That sounds good and different. I like to fix up some jambalaya rice. Then sear the duck like you mentioned. Then put the rice in a baking dish and put the ducks on top of the rice. ( 6 duck breast) Top the whole dish with bacon, and bake in the oven on 350 for an hour uncovered. You can use whatever kind of rice you like. I just tried it with jambalaya rice and it turned out really good. |

Go to wally world and get a smoker and smoke it. Be sure to use the water pan, can through some beer or wine in the water. |

clint, old bud, don't want to sound dumb here but WTH is Jambalya Rice? I use duck in my Jambalya all the time along with any other meat on hand but never heard of "Jambalya Rice"...
next thing you gonna tell me is that there is a packaged "dirty rice"... |

Using nice duck breast with a good layer of fat score across the fat side with a sharp knife being sure to just cut thru the fat and not the meat. Get a skillet nice and hot with the oil of your choice just starting to smoke and place the breast fat side down and sear that side good paying attention so as not to burn them. When they have that golden brown crust on the fat then turn once over for about 3 minutes and then take them out to rest. Serve with whatever are your favorite sides and enjoy. You want them no more than medium rare and most prefer them rare. And yes Tom they do have packaged dirty rice made by Zatarians ( sp ) as well as jambalaya rice and several other flavors and they are pretty darn good considering they come out of a box. When time does not permit to cook rice the slow way these will work great. |

Season two skinned duck breasts,wrap in bacon and lay on a sheet of al foil.Cut up potatoe,carrots,squash or what ever you like and lay on top of duck breasts.Season and drizzle with olive oil.Fold the foil into a packet and place on a cookie sheet in the oven at 350 for about 11/2 hours. |

Tom it is boxed rice. It is made by Zatarians like Big Dog mentioned. Most grocery stores carry it in different flavors. I tried it with dirty rice before and it turned out kinda bland. The jambalaya flavored rice was alot better. |

Here is something you might like. I take the breasts and cut them in 4 squares. Wrap them in bacon and put them on a kabob with peppers, onions, mushrooms. BBQ until medium rare and plate over rice with some garlic bread and you are good to go. You can even marinade the duck over night in a lemon pepper marinade. I have done it both ways at my annual hunter's feast and it has gone very fast. |

Doc and Clint, thanks for info....never saw either before but wasn't looking either....I will have to look for both next time I go to store! Brought me back some fine andoullie and boudin from my visit with Brian....have to try the Zatarains dirty rice with next batch of white beans , dirty rice and andoullie. |
