Meat in the fridge

About three weeks ago I killed the last deer I had a chance at and after cutting it up I put the tenderloins and a roast in the refridgerator as I don't like freezing them. A couple of days later I got a call that I'd be heading to Maryland for 2-3 weeks to work during hurricane sandy. Well a few days later I wound up working in NYC in the Queens and Brooklyn area for about 10 days so I was gone a total of about 2 weeks. Needless to say the meat was not on my mind and apparently never crossed my wife's mind so the uncooked meat never made it to the freezer or the grill/stove. So as soon as I get home I find my raw meat in the refridgerator and quickly put it in the freezer. There is no obvious odor to it other than smelling like deer meat and both are still a maroon color, but I'm just not sure as you can't see germs so I don't know whether it's safe to eat or not. Just wanted to see what everyone else (especially the more experienced ones) think about cooking this meat now. I used to freak out about it being in ice water for a few days, but finally learned that wasn't a big deal as long as you keep ice in there and it actually makes it better. I didn't know if this was kind of the same thing and I'm playing it too safe or I need to chunk it. Honestly to me it seems perfectly safe. |

There's a method of aging called dry aging where meat is in the fridge for usually about a week. Typically it's dried, wrapped in a few layers of cheese cloth for the process. Then when it comes out of the fridge, any brown is trimmed off, and of course given it's venison, I assume that every speck of fat and sinew, etc was cut off before going into the fridge, I'd say give it a shot. I'm fairly certain the roast will be ok. The tenderloins, being as they aren't that thick I don't know. I'd still say if they don't stink, try 'em. Everybody needs cleaned out once in a while anyhow. ;-) But I think you'd be fine. |

As long as the meat maintained a pretty constant temperature and the fridge door wasn't constantly opened, it should be fine. Remember that your wild game isn't subjected to the same temperature variations as grocery store meat, and the stuff from the store is a hell of a lot older than two or three weeks before it's cut, wrapped and placed in the display case for sale!!!!!

well... let's see... probably about 5 minutes to pull it out and slice off a few steaks. Peel some taters and get em on for mashed. Slice some onions and into the pan and saute 'em, then when the taters are done toss the steaks into a hot pan, mash the taters, flip the steaks, get the plates and silverware out. Take the steaks to medium rare and serve.... I'm guessing 45 minutes start to finish...  |

Thanks guys that's pretty much what I was thinking. Steve that sounds about right unless he wants the roast then it will be about 6 hrs. Come on over! We'll see how it turns out! |

Actually bambi, this is gonna sound really wierd but trust me, try it. If you like sauteed onions, cook off some bacon until crisp (I nuke it), break it up into smaller pieces and dump it in with the onion. Then when the onions are almost done, (here comes the wierd part) put in a LITTLE Heinz catsup. And YES, it HAS to be Heinz. Not too much or it will quickly over power. Honestly, was a total mistake but man... try it. If done right (not too much) people will love it but not be able to tell what that taste is... |

Just because it doesn't smell bad or color is OK DOESN'T mean it is still safe to eat. BU*T, given the time in the fridge You shoul NOT have any problem cooking and eating it. Typically a side of beef hangs for more time than the time yours was in the refridgerator. At 34F it its all good to go onto/into the the grill/stove. Enjoy my friend. |
