Grouse breasts boned out

1 Cup Apple juice

1 can apple pie filling

cinnamon to taste

Coat a sautee' pan with olive oil or similar cooking oil or butter
and season the grouse breasts with a little salt.  Fry until browned.
Add the apple juice and cover and simmer ten minutes.  Add the apple
pie filling and cover and simmer three minutes.  Plate the breasts and
slow boil the juices and apple pie filling until thickened slightly. Spoon
over the grouse breasts and sprinkle with cinnamon.

Serve with baked apples, apple pie, or apple schnapps and enjoy!

Sorry for the late reply but I've never tried it on Duck. I did use a recipe for duck that used sauerkraut years ago. It was actually in an NAHC cook book back in the 80's. If you try the apple recipe with duck let me know how it tastes.
