When I first moved to Az. I was told by several folks that jackrabbit was not worth eating but there is so much meat on one I had to try. I par-boiled it in a crock-pot for an hour, pulled the meat off the bones, then mixed in some B-B-Q sauce and sautéd onions. Then I put it back in the crock-pot and slow cooked it the rest of the day. Basically like making pulled pork just use a rabbit or two. Myself and every one else that has tried it thought it was quite good. Since then I've made it a few times mixing both jacks and cottontails and I think its actually best with both meats mixed together. So, thats my favorite way to cook 'em.

Par boil them in a pressure cooker, let cool, then pick the meat off the bones, flour and deep fry. Use some of the juice and make a brown gravy, add the fried rabbit and serve it on a bed of rice with some turnip greens, sliced tomatoes, cornbread and corn on the cob.

I myself love a rabbit stew, just like making beef stew, cut your rabbit in to cubes flour and fry in a large pot, make a good rue then add a small amount of water.Let this cook, and liquid fey the rue as well as tender the meat adding flavor, slice onion, carrot, celery, add this to the pot also water.turn on low and start making hoe bread, or biscuits.after a few hour get the largest bowl you have and enjoy a great southern stew.PLEASE>>>ENJOY..I do
